Vegan Spinach Dip
Prep Time: Approx 15 minutes
Cook Time: 25 Minutes
Ingredients
1 cup of fresh, chopped spinach
1/2 cup of vegan mayo
1/2 cup of vegan cream cheese
1/2 cup of shredded vegan cheese (I use Violife mozzarella cheese)
2 Tsp of garlic powder
1/2 Tbsp of lemon juice 
Salt and pepper to taste
Vegan Parmesan (Not required, but I use Violife Parmesan)
Directions:
  1. Preheat oven to 400 degrees 
  2. Chop Spinach into small pieces, shred cheese if not purchased shredded
  3. Mix Ingredients (except for the Parmesan cheese, that goes on top before baking)
  4. Spread into a large baking dish
  5. Sprinkle Shredded Parmesan on top and bake for 20-25 mins
You can use tortilla chips or vegan bread/croissants. I used tortilla chips
After baking, let sit for a few minutes before diving in.
Warning, this is SO good! Your vegan and non vegan friends and family will go
bananas for this!
